Gingered Carrots

Ingredients

  • 2 lbs. carrots
  • 6 TBL butter
  • 1 tsp. ground or fresh ginger
  • 1/2 tsp. salt
  • pepper
In large saucepan, cook carrots with about 2 cups water.  Boil. then simmer 15 minutes - until soft.
Drain and then mash ro use food processor.
Return carrots to pan, then add butter, ginger, salt, and pepper.
Cook low, until nice and hot.

YUM.
